Lemongrass Vegetarian Chicken w/ 2cup Veggies

Don't get scared by name chicken. It is pure vegetarian dish. If you go vegan restaurants you see this kind of names in their menu but all are vegan. This is made with wheat protein similar to seitan. I found this in asian grocery stores like hmart, 99ranch etc. See here how we can make complete meal for lunch or dinner using this.

Ingredients:

• Vegetarian Chicken - 114g
• Moong bean sprouts - 1 cup
• Bell peppers - 1/2 cup
• Mushrooms or Broccolli - 1/2 cup
• Lemongrass minced - 1 tsp
• Green Onions - 2 stems
• Cilantro chopped - 2 Tbsp
• Ginger garlic paste - 1/2 tsp
• Sriracha - 1 tsp
• Lite Soy sauce - 1 tsp
• Turmeric - 1/8 tsp
• Lite salt (to the taste)
• Splenda/Stevia - 1 pkt (Optional)
• Olive/Grapeseed oil - 1 tsp.

Preparation:

  1. Here I am using vegetarian chicken found in asian stores (or you can use unflavored seitan) about 114g (i.e for 20g protein). And 2 cup IP vegetables, here I am using 1 cup brean sprouts, 1/2 cup bell peppers, 1/2 cup mushrooms, green onions and cilatro. Also ready other ingredients listed above.
  2. In a mixing bowl weigh 114g of vegetarian chicken and add 1 tsp of minced lemongrass, 1/2 tsp ginger garlic, 1 tsp sriracha, 1 tsp soy sauce, 1/8 turmeric and mix all together.
  3. Place a work on stove with high heat and add 1 tsp of oil. Once oil heated then add marinated veg chicken mix and fry for 2-3 min then add bell peppers and mushrooms then cook for 2 min and switch off heat.
  4. Now sprinkle Splenda (optional) and add green onions, sprouts, cilantro then stir all together and transfer to serving plate.
