Protein Masala Vada (Baked) Nuggets

This is a baked recipe works as snack protein. As you know, in authentic recipe we use dal (lentils) to prepare masala vada, but we should not eat lentils in IP diet due to high carbs along with protein. So here I made this with only proteins, it taste different when compared to real vada because there is no lentil carbs here, but still for a change you can try this for snack.

Ingredients:

Vital Wheat Gluten Flour - 35g
Unflavored Soy Protein Isolate - 23g
Flax Seed Flour or Oat Fiber - 13g
Sauerkraut - 1/3 cup
OR Grated Dudhi(Sorakaya) - 1/3 cup
• Garam masala - 1/4 tsp
• Chilli Powder - 3/4 tsp
• Green Chilli finely chopped - 2
• Cilantro/Coriander finely chopped - 2 Tbsp
• Ginger garlic paste - 1 tsp
• Baking soda - 1/8 tsp
• Liquide egg whites 1 Tbsp (optional)
• Lite salt(to the taste)
• Olive/Grape seed oil - 1 tsp.

Preparation:

  1. Ready all ingredients listed above and weigh protein and flax flours as mentioned.
  2. Add all dry ingredients together and mix i.e (35g of Vital Wheat Gluten Flour, 23g of Unflavored Soy Protein Isolate, 13g of Flax Seed Flour, 1/4 tsp Garam masala, 3/4 tsp of Chilli Powder, 1/8 tsp of Baking soda and Lite salt to the taste).
  3. Pre-heat oven to 350°F. Now add wet ingredients quickly finely chopped 2 green chillies, 2 Tbsp cilantro, 1/3 cup Sauerkraut OR Grated Dudhi(Sorakaya), 1 tsp of ginger garlic paste, 1 Tbsp of egg whites, 1 tsp of oilve/grape seed oil mix all together like dough and add ice water as needed.
  4. Once dough prepared do not wait, immediately make round balls and press to round or ovel shape as shown below and place it on baking sheet. Once all done transfer baking sheet to over and bake for 20 min and turn once after 10-12 min.
  5. Here is HOT HOT Protein masala vada for snack. You can also take this with lunch/dinner with 2 cup vegetables. You can dip this with Walden Farms All Zero Ketchup (Optional).
