Roasted Radish and Celery Root (Celeriac)

Here is another taste bud changing roasted vegetable option over routine salad. This recipe is made with Radish & Celery Root (Celeriac/Celery knob) and roasted with spices. This counts towards vegetable requirement for lunch/dinner.

• Celery Root 1/4 inch cubes - 1 cup
• Round Red Radish Chopped 1/4 cubes - 1 cup
• Olive Oil - 1 tsp
• Chilli powder - 1/2 tsp
• Lite salt(to the taste)
• Seasoning (black pepper, garlic powder, parsley flakes).

  1. Here we are using Celeriac Root (this vegetable works like potato & IP friendly, this can be found in asian grocery stores or wholefood/natural grocery stores) and Red round radish. Peel and wash celeriac and cut 1/4 inch cubes for 1 cup and also cut radish 1/4 inch cubes for 1cup.
  2. Pre-heat oven to 350°F. In a mixing bowl add radish & celeriac. And add 1 tsp oil, 1/2 tsp chilli powder, sprinkle lite salt, black pepper, garlic powder & parsley flake and mix all toghter then spread on baking sheet.
  3. Transfer baking sheet into oven and bake for 30 min, then transfer to serving plate.
  4. Here is HOT HOT Roasted Radish & Celeriac. This works as 2cup vegetables requirement of lunch/dinner.
