Sweet Corn Baked Garelu

Here is another traditional recipe made healthy. Usually it's very difficult to make these with sweet corn becuase of water content, but with a trick we are able to make it. It is easy to do with regular fresh corn that we get in India, but not with sweet corn beacause when you grind them it will become liquid consistancy and hard to handle for this kind of recipe. Ingredients:

• Fresh Sweet Corn Kernals - 2 cups
• Garlic Cloves - 5 pcs
• Dry Red Chillies - 5 pcs
• Coriander Seeds - 1 Tbsp
• Salt -3/4 tsp
• Jaggery (bellam) - 1 tsp (Optional)
• Oil - 2 tsp.

Preparation:

  1. Ready all ingredients shown below, about 1 1/2 fresh corn yields to two cups of corn kernals, Tip: Break corn into half so that you can easily pull seeds.
  2. Put all ingredients except oil in griding jar and grind coarsely. Then in a Colander place muslin cloth and transfer grinded paste to into it and let it drain all liquid portion, then twist and squeeze out as much liquid as possible.
  3. You will get almost 1 cup of liquid in 2 cup grinding. This is almost starch that we are squeezing out. So calories/carbs also reduced alot. (Hint : If you don't like throwing that liquid then you can make Sweet Corn Rava Dosa with it? Yes.. Just add 1:1 sooji & maida to squeezed corn liquid and add some green chilli, ginger pieces together and make corn flovered rava dosa).
  4. Pre-Heat oven to 380° F. Now add 1 tsp of oil to corn paste and mix it well. Take a baking tray and place a parchment paper and apply little oil where ever you make garelu. Now take small golf ball size round corn paste and place them on baking sheet and press it round as shown in below picture. Once you made all of them then spray with Olive oil and transfer to over and bake it for 22 min and flip it after 16 min.
  5. If the edges got burned in oven, scrape with knife or cut burned edges with scissors and place them in serving plate and enjoy healty baked sweet corn garelu .
