Lettuce Roll Sandwich - Lettucewich (Eggetarian)

Lettucewich is nothing but a sandwich minus bread, since we need to stay away from regular bread this will work. Simply roll vegetables & protein with allowed seasonings to make this Lettucewich. This is IP friendly and simple n tasty recipe for complete lunch/dinner. See here how we can make this.

Ingredients:

• Liquid Egg Whites - 129g (or 14g protein)
• Boiled Egg - 1 pc
• Iceburg Lettuce - 4 leafs
• Iceburg Lettuce Shredded - 1/2 cup
• Vegetables - 2 cups (Spinach, Tomotoes, Bell Peppers, Cucumbers, Jalapenos, Cilantro)
• Seasonings (Lite Salt, Chilli Fakes, Black Pepeer, Mustard, Sriracha)
Walden Farms Salad Dressing.

Preparation:

  1. Ready with all ingredients listed above and cut vegetables as show below. Carefully seperate Iceburg leafs about 4 to roll sandwich and you can use small lettuce pieces to shred 1/2 cup.
  2. Weigh 129g of Liquid Egg Whites (for 14g of protein). To make omelette, in pan lightly spray olive oil and sprinkle chilli flakes/black pepper & lite salt and pour liquid egg whites, flip and cook both sides and transfer to a plate. Now slice boiled egg as shown in below picture.
  3. Take silver foil sheet and lay down on flat surface and then arrange lettuce leafs into rectangle shape and place egg white omlet on lettuce leafs and then arrange all ther vegetables as shown below.
  4. Now add seasonings of your choice and then use all zero Walden Farms Salad Dressing on top (do not use regular dressings - adds calories, carbs).
  5. Now arrange sliced egg on top and cover it with shredded lettuce and roll tightly with silver foil as shown below.
  6. Cut the roled sandwich into half and eat carefully, if you open silver foil it might get messy. Enjoy this lettucewich for lunch/dinner as complete meal.
