Korean Egg Plant Salad (Occasional Veggie - IP friendly)

• Long Egg Plant - 1 or 2
• Green Onion - 3 stems
• Garlic minced - 1 tsp
• Lite Soy Sauce - 2 tsp
• Kura Karam (or Pickle Chilli Powder) - 1/2 tsp
• Oilve Oile - 1 tsp
• Light Salt (to the taste).

  1. Ready all ingredients listed above. Now take one 12 inch long egg plant or two 6 inch long egg plants, then cut about 3 inches in size and make it half as shown in picture. Now place this egg plant pieces in microwave cooker and steam for 3 min (You can also steam stove top instead). Do not over cook, just steam until you can easily break with knife.
  2. Once egg plant pieces steamed, then with hands strip each piece into 3~4 pieces as shown in below picture. Be careful with hot egg plant pieces, you can dip your hands in water each time and work with steamed egg plant pieces.
  3. Now in a mixing bowl add chopped green onion & garlic and 1~2 tsp lite soy sauce, 1/2 tsp kura karam (or picke chilli powder or chilli powder), Oil, lite salt (to the taste) and then stripped egg plant pieces and mix all together and transfer to serving plate.
