Ingredients:

Quest Protein Chips - 1 pkt
• Celeriac root (Medium) - 1 cup
• Califlower - 1/2 cup
• Spinach Chopped - 1/3 cup
• Cabbage Diced - 1/3 cup
• Cilantro / Coriander - 2 Tbsp
• Green Chilli - 1 or 2 pcs
• Green Beans - 1/3 cup
• Red Chilli Powder - 1/2 tsp
• Kasuri Methi - 1/2 tsp (Optional)
• Coriander Powder - 1 tsp
• Light Salt(to the taste)
• Liquid Egg Whites - 2 Tbsp(Optional) OR Mustard OR Corn Starch - 10 g(Exta calories & carbs)
Walden Farms All Zero Ketchup (Optional).

Preparation:

  1. Ready all ingredients listed above. Cut 1/2 cup of Califlower & 1 cup of Celeriac Root (this vegetable works like potato & IP friendly, this can be found in asian grocery stores or wholefood/natural grocery stores) about 0.5 inch size cubes and then little water and microwave for 5-6 min or pressure cook. Cut other vegetables as shown in below picture. You need 1 pkt Quest Protein Chips to use like bread crumbs and protein source for this dish.
  2. Once Celeriac and Califlower cooked at mashable consistancy, transfer into mixing bowl and mash alike potato.
  3. Add all veggies into mash, then add spices 1/2 tsp Red Chilli Powder, 1 tsp Coriander Powder, 1/2 tsp Kasuri Methi(optional), Light Salt (to the taste) and mix everything toghter. Optionally you can add 1 tsp of Oilve/Grape Seed oil to enhance taste. If you feel mixed dough is not sticking together then you can add few grams of Vital Wheat Gluten or more Celeriac Root Mash.
  4. Pre-Heat oven to 300° F. Crush Quest Protein Chips into small flakes like shown in below pic. For binding you can use 2 Tbsp of Liquid Egg White & 2 Tbsp of water OR 1 Tbsp Mustard and 2 Tbsp water OR 10g of Corn Starch & Water (This adds extra calories and carbs), if you don't eat egg then best option to use Mustard that doest add any extra calories or carbs.
  5. Make mixed dough into a ovel shaped like show in below picture and dip that in binding mixture you chosen and then roll all sides in crushed Protein Chips, then place cutlet on baking sheet and repeat on remaining dough. Once you done then transfer baking tray into over and bake for 15 min and flip in between. Once baked transfer to serving plate.
  6. Here is Protein Vegetable Cutlet is Ready to Enjoy. On side you can have with Walden Farms All Zero Ketchup (Optional).
