Protein Sweet Peppers

This colorful sweet peppers looks great and healthy, Tofu protein and spices makes a tasty dish, this can be eaten like a snack or whith roti/chapathi/rice.

Ingredients:

• Tofu (Firm) - about 180g
• Sweet Peppers - 6 pcs
• Olive/Grape Seed Oil - 1 tsp
• Light Salt (to the taste)
• Coriander Powder - 1/2 tsp
• Chilli Powder - 1/2 tsp
• Ginger Garlic Paste - 1/2 tsp.

Preparation:

  1. Ready all ingredients listed above. Weigh 15g worth of Tofu (about 180g) and scramble with hand to small pieces as shown in below picture. Also select about 6~7 sweet peppers and wash and slit them in center for one side to stuff tofu masala.
  2. Place a pan on stove with medium to high heat and add 1/2 tsp of oil and spread entire pan, then add scrambled tofu and stir and cook for 2-3min.
  3. Now sprinke light salt to the taste, add 1/2 tsp Coriander powder, 1/2 tsp Chilli powder, 1/2 tsp Ginger & Garlic paste and stir all together and cook for 2 min and let it cool for some time to stuff in peppers.
  4. Once Tofu masala is cooled then stuff inside each peppers as much as it can fit, once peppers are stuffed then place a pan on stove with medium eat and add 1/2 tsp oil and spread on entire pan and place all pepers on a pan as shown in below pic and spray little olive olile on top of them and close with lid and cook for few min and turn in between until you see brown patches. Once peppers are cooked transfer them to serving plate.
