Egg Omlet with 2 Cup Vegetables (Eggetarian)

Ingredients:

• Whole Egg - 1 pc
• Liquid Egg Whites - 120g
• Baby Spinach - 1 cup
• Mushrooms -1 cup
• Green Chilli Small Peices - 1 or Red Chilli Flakes - 1/8 tsp
• Coriander (Optional)
• Light Salt - 1/8 tsp
• Chilli Powder - 1/4 tsp
• Ginger Garlic Paste - 1 tsp (Optional)
• Olive/Grape Seed Oil - 1/2 tsp
Walden Farms All Zero Ketchup (Optional).

Preparation:

  1. Ready all ingredients mentioned above. Cut Mushrooms into small pieces - 1cup and wash 1 cup baby spinach.
  2. Take a small mixing bowl and weigh 120g of Liquid Egg Whites, and break Whole Egg into that. Then add 1/8 tsp of Light Salt, 1/4 tsp of Red Chilli Powder and wisk well with fork.
  3. Keep 12 inches pan on Medium heat and spray well with Olive/Grape Seed Oil. Spread 1/8 tsp Chilli Flakes or 1 Small Cut Green Chilli, and Sprinkle litte Light Salt then add spread Mushrooms and Spinach as shown below.
  4. Now pour Egg mix on top of vegetables and then keep a lid and let it cook for few minutes then turn and cook other side and transfer to serving plate.
  5. Egg Omlet with 2 Cup Vegetables is ready to eat!!, you can use Sriracha or Walden Farms All Zero Ketchup on side.
