Protein Fried Rice with 2 Cup Veggies

Many people are addicted for rice, without it very difficult for them. Unfortunately we can't have rice in Low Carb - High Protein diet. Here I made a little tweak, I used only 1/3 cup cooked low carb rice* to make this fried rice within allowed carbs. Very occationally we can add this to diet in Phase1/2 and occationally in Phase3. Ingredients:

Low Carb Rice Cooked - 1/3 cup
Soya Granules (TVP) - 38g
OR Soya Granules (TVP) - 28g & Egg White Liquid(46g) <-- 9 calories less and tastes better for Eggetarian
• Grated Califlower - 1 cup
• Cabbage Julienne cut - 1/2 cup
• Bell Peppers Julienne cut -1/2 cup
• Green Chilli Small Peices - 1
• Coriander (Cut finely)
• Light Salt - 1/8 tsp
• Chilli Powder - 1/8 tsp
• Black Pepper - 1/8 tsp
• Lite Soy Sauce - 2 tsp
• Olive/Grape Seed Oil - 1 tsp.

Preparation:

  1. Ready all ingredients mentioned above. In a microwavable bowl add Grated Califlower, Soy Granules, little water and microwave for 2-3 min or as per instructions on Soya Granules. Cut vegetables and keep ready aside, then measure 1/3 cup Low Carb Cooked Rice.
  2. (Note: If you prefer Egg then use 46g of Egg white Liquid with 1/4 tsp oil prepare scramble egg and keep aside). Place a wok/pan on stove with High heat, then add 1 tsp of Olive/Grape Seed Oil. Once Oil get heated add Bell Peppers and stir, then after 1/2 min add Cabbage and stir for 1/2 min. Now add microwaved Grated Califlower and Soya Granules and stir for 1 min.
  3. Now add Low Carb Rice and stir, then add about 1/8 tsp Salt, 1/8 tsp Black Pepper, 1/8 tsp Chilli Powder and 2 tsp Lite Soy Sauce stir all together for 2min. Now add (Optional Scrambled Egg), Green Chillis and Coriander, now mix and transfer to serving plate.
  4. Here is High Protein & Low Carb Fried Rice ready to enjoy!! In this recipe I did not use Egg but as I mentioned above you can make with ot without Egg, when egg is used you are reducing Soya Granules so calories and carbs are getting reduced in Egg version recipe.
